I wouldn't worry about the globe vs flat when teaching kids about the earth. You don't cease to be Catholic because of your position on the shape of the earth. I would say it's more important to emphasize geocentrism and young earth creation.

If you want to avoid the modern assumptions about cosmology, then it would be better to stick with Cassini and a ptolemaic system while showing the problems with modern astronomy.

One thing that needs to be taught is the Bible and Catholic history.

Teach a science that is geared towards agrarian practices. 

Very few children in our area were taught how to butcher their chickens, lambs, etc. and to can their fruits and veggies.  (These skills were taught mostly by their grandparents.)

And the need to raise animals and a garden naturally. 

 
Harder times are coming.  Time to get prepared.
