  • Smoked Meat!

    No doubt about it, America is the world heavyweight champion of smoked meat.  Every kind of meat, fish, poultry.  Nobody can compete.

    And within America, there are several "hubs" of smoked meat epicenters: Kansas City, Nashville, Texas, the Carolinas.

    But the Mecca is by far Texas, and within Texas, one newspaper (Texas Monthly) ranks the top 400 pits, and this one is for the #1 pit in the #1 state of smoking (and since smoking is a useful prepper skill, and the video was relaxing to watch, I thought I'd post it here).

    One day I hope to visit.

  • Couple weeks ago my brother had a rib competition for Oktoberfest. I made bourbon raspberry brined babybacks using the 3-2-1 method. They had no traditional bbq sauce so I was out on a limb a bit. They turned out awesome and I tied for 3rd out of 9. Ribs are not my strong suit and in our circles there is a real passion for smoking food so I was glad to not place last.

  • The local BBQ hot spot here made it in the top 5 of that list. I reckon by your post that you'd be appalled to hear that they've been open for a couple of years now and we've never eaten there. The problem is that brisket is crazy expensive these days. (and I'm not a fan of crowds) You might have pushed me over the edge, though. That video made me want some BBQ.

  • Although in NE Ohio, I have a Texas BBQ place 2 minutes from my house, a restaurant that's actually owned by a guy who works for the same company that I work for.  So, the company I work for produces software used to plan the maintenance and upkeep of factories, and most of our biggest customers are oil and gas companies (refineries in particular).  So there's that link to Texas (where much oil and gas is based).  At one point he was hired by our company due to his oil and gas industry knowledge, but then transferred up here to NE Ohio because that's where the software division of our company is located.  He missed Texas BBQ so much that he started this restaurant.  Then, about a month after we moved to our current home (about 3 years ago), the Mexican restaurant down the street went up for sale.  Lo and behold, he bought the property and turned it into a Texas BBQ restaurant.  So, small world.

  • Other than hot wings, not actually smoked, smoked meat isn’t really a thing in the far northeast of the US.

  • I remember a smokehouse down around Hillje, TX which sold some awesome smoked breakfast sausages called "catturds."
