  • Not very pleased with the results. I have a few bottles in the fridge, and they're all drinkable, but not much alcohol. I'll have to use the stoppers the next time I produce a batch.
Some would have people believe that I'm a deceiver because I've used various handles on different Catholic forums. They only know this because I've always offered such information, unprompted. Various troll accounts on FE. Ben on SuscipeDomine. Patches on ABLF 1.0 and TeDeum. GuitarPlucker, Busillis, HatchC, and Rum on Cathinfo.

We had some old kombucha we put in a apple cigar vinegar glass jar to use as kombucha vinegar.  Well, I forgot about it for several months and went to open it to use it and it had gotten SUPER alcoholic and fizzy like beer!  Total mistake but it was interesting.

I would be interested in hearing about any herbal wines/ales which people have made.  I have never tried PawPaw.  Ours were always to stiff and hard to eat and work with at my parent's farm.   They never seemed to ripen properly.

I am not surprised. Just checked out your latitude approx 36 to 39 N. Brrrr....
Pawpaws do best in the tropics. We are at 17S and paw paws do well here. I am waiting on mine to ripen enough to pick but before the birds get into them. same with bananas.

I am interested in making herbal wines and ales but haven't really done it myself.

My experience is making slightly fermented drinks like homemade root beer, honey-wine, dandelion wine, kombhcha etc.

My pleasure. You can cook green paw paw

and it can be used as a meat tenderiser, though I have done neither.

Oh!  How neat!  I will have to look into that!  Home raised beef tends to be a bit tough.
