Another thing about cooked, you can eat a lot more. Last night I had around 8 delicious whole steamed carrots with supper. Who is ever going to eat 8 raw carrots at one go, unless on a weird bet, or as some kind of self-torture? This more than compensates for vitamin loss.

Graham - I think I mentioned this as well in a previous post.  And, steamed carrots are probably my favorite bulk vegetable meal.  You really can eat a whole bunch, and there are no digestive problems.  But, I will get digestive problems if I eat more than 1 full raw carrot.  Cooked vegetables(whether starch or not) are such a health food/program.  Because, you can consume so much.  When I am sick, that is what I do.  

Also, have you ever drank the leftover steamed water?  I am planning on trying it.  One, because of the nutrients, and two because it smells so good.

Raw has value. It is taste that is desired more than not.
Also flavor is better in cooked and or steamed vegetable
or fruit. So choose the best option when doing so.
