As I am still wheelchair bound (yuck!) since my fall in October, I have had to be creative when it comes to cooking. The stove is too high for me to use anything but a skillet and you can do only so much in a skillet. So I switched to making casseroles and throw in the oven.
While shopping I saw Progesso Chicken Pot Pie soup and got this brilliant idea to use it for a real pie. Got the deep dish frozen pie crust and poured two cans in with chicken leftovers and put in oven and it was a prep of 5 mins, baked the pie per the pie crust instructions and it was fabulous. It was a definite winner here in the house. Nothing was left. The family begged for some more tonight so I'm making two pies and hope there will be some leftovers.

If you have Trader Joe's anywhere nearby, their pie crusts are scrumptious, better than mine from scratch. They are totally fattening, though.

Are you supposed to bake the bottom crust a little bit to keep it from getting too soggy? I'd like to try this this weekend, but I have never actually made a pie.
