Our local food bank puts out food they cannot give away to "Take At Your Own Risk" every few hours. Thursday they had pears. I cut out the rotting parts and per the internet instructions :reporter: I boiled them in sugar water. They are cooling now.I am going to freeze them in gallon sized zip locks. I don't have ascorbic acid though. Do you think they will freeze OK? Will they just be brown? I do have some OJ concentrate, should I add that?
We always freeze without the ascorbic acid because of a family allergy. There is no problem with leaving it out. You might get a bit of browning, Our soup kitchen got a boatload of tomatoes and cherry tomatoes this week. We were giving out stuff for fresh salsa and chow chow.

How can anyone be allergic to ascrobic acid? That's Vit C. That's impossible.
