    DAILYKENN.com -- Americans are embracing the keto lifestyle after realizing the federal government's "food pyramid" guidelines may be killing them. 


    Gone are the days when carb-laden bread and pasta were the main staples of our diets. Fat, it turns out, doesn't necessarily make you fat. Rather, it allows your body to utilize ketones as fat-burning fuel, rather than carbohydrates. 

    Below is my recipe including links to the products I actually bought and use (except for the spatula; I already had one.)

    Giving up pancakes is not required. Rather, you use a keto-friendly recipe that eliminates wheat flour. Don't expect your keto-cakes to look and taste like flour pancakes. Personally, I think the keto-cakes taste better than most flour pancakes.

    What you need: Ingredients...

    2 eggs

    2 tablespoons of butter

    2 tablespoons of cream cheese

    1 drop vanilla stevia See vanilla stevia

    1/4 teaspoon baking powder See baking powder

    1/2 teaspoon Athony's Psyllium Husk See psyllium husk


    2 tablespoons of Lakanto sugar free maple syrup See maple syrup

    1 cup of almond flour See almond flour




    What you need: Utensils...

    Air oven See Black+Decker Air Oven

    Small food processor See Koios Food Processor

    Cooking parchment paper See Reynolds parchment paper

    Spatula See spatula

    Table spoon and tea spoon


    How you do it...

    1. Preheat air oven to 350 degrees.
    2. Melt butter in microwave safe container. 
    3. Blend eggs in small food processor with melted butter and other ingredients except almond flour.
    4. Once blended, add almond flour.
    5. Place half of the batter between two cooking parchment sheets. Roll the batter into a 1/4" pancake (or mash it with your hand). Be sure it's a bit smaller than your oven basket.
    6. Trim the parchment to about the size of the oven basket.
    7. Remove the top sheet and carefully place the batter still on lower parchment paper in the air oven basket.
    8. Cook until done (usually about 5 minutes). 
    9. Carefully remove your pancake with a spatchula under the parchment paper.
    9. Repeat with the second half of the batter. 
    10. Spread butter over your pancakes and pour on the keto-friendly syrup.
