Low carbin on Friday- whats cookin??

  • Since I've found out there are many more of you on here low carbing now (woohoo!), and since we're all practicing our Faith in abstaining from meat on fridays, maybe we can assit one another on what we end up eating on fridays that is low carb. :)

    Me: Tuna salad w/ celery sticks; eggplant wedges with some tomato sauce and cheese on top (like a pizza); spaghetti squash with browned butter and mizithra cheese; going to Souplantation/Sweettomatoes (when I'm eating out) (salad galore); Fish (salmon, talapia, etc) baked.

    A really good website is: Linda's Low Carb Menus

    I've tried to stay more and more away from processed foods, and Linda (at the website above) has lots of them; that said, there are really great ideas there, and at Low Carb Friends Bulletin Boards , which is a forum .

    Anyways, let me know your own ideas! :)

  • I didn't have it tonight, but I enjoy grilled salmon, baked sweet potato, and salad.  I have always been able to eat all of the sweet potatoes that I want when I'm doing low-carb--something about different kind of carbs, I think.

  • I made eggs with peppers, onions, and cheese, cooked in butter. Very filling.

    Commonly on Friday, I make vegetable stir fry--no rice, eggplant not-Parmesan, various shrimp and veggie dishes with a sauce, egg drop soup with vegetable broth, portabella pizzas, and so on.

    Usually, we just have eggs because they are cheap and nutritious.

  • I had a few sauteed shrimp on a Caesar salad.  It's good to see other low-carb Catholics :)  I have lost weight doing this before and don't know why it took me so long to start back on it again.

    Thanks for posting the links - they look like really good resources. I've not really adopted the Low-carb diet full-time yet, but I'm starting out with experimenting with it first, so the links will be helpful.
