  • I'm looking for some new ideas of food for Lent.  I'm tired of the usual round of tuna, eggs, soups of peas, beans, etc.

    What favorite recipes do you use?  I'm not looking for anything fancy, just TNT ideas.

  • All I know is that we're set up rather nicely for a crawfish boil on Fat Tuesday.  Gonna have crawfish, corn, red taters, shrimps, and smoked sausage all stewin' in a big ol' vat of boilin' seasoned water.  Gunna be tasty.

  • Try this, Marlelar:

    Boil potatoes and slice,
    slice and dry fry (i.e. singe) eggplant.
    Cheddar cheese
    tin of tomatoes - separate tomato from juice.

    Butter a casserole dish, alternate layers of potato, eggplant, tomato, cheese then pour juice over the top. Bake in a moderate oven for 1/2 hour. It is so flavoursome there is hardly any need for seasoning.

  • I make a mean grilled cheese, I like mine with a little bit of chopped onions, sometimes I put tomatoes instead like a "tomato melt" or add tuna salad to make a nice tuna melt.



    Also if you like cottage cheese salad, here's a Weight Watchers recipe that's surprisingly tasty and takes about 5 minutes to make:

    1 large container of Cottage cheese
    1 or 2 table spoons of Mayonnaise - or to suit
    add 1 small-med chopped onion and green pepper to suit  
    pinch of cayenne pepper to suit
    pinch of Dill

    Amazing how tasty the simple recipe is, my co workers really like this one and  used to put in requests regularly for this one, it is really good and can easily keep for a week in the fridge.

  • Marsha, the paleo/primal folk have no meat recipes that are simple and good.  Do a search with paleo or primal, and vegetarian.  Their recipes focus on protein and less junk carbs, so more concentrated nutrition. Also good protein content = satiety.

    We eat poached eggs a lot since they can be served with anything.  Quick dish, sweet potatoes sauteed with kale and poached eggs on top.  
    I think free run eggs from a farm or farmer's market taste best.  Look for deep orange yolks.

  • I often soak dried beans (borlotti, red kidney, chick peas - one type at a time) and cook them so  they are ready in the fridge for a salad. Similarly with potatoes. I usually just make a tossed salad with as many ingredients as I have both in the fridge and in the garden. I also use edible weeds (purslane, dandelion, milk thistle) and herbs from the garden (parsley, pineapple sage, rocket).

    A typical salad could include some of the above ingredients plus tomato, capsicuм, celery (including the tops), grated carrot, fennel. You can add chopped boiled eggs, cooked lentils or tuna.

    then I dress with lashings of balsamic vinegar, soy sauce and olive oil.  

    This always goes down well and is a complete meal.

  • A tea ring with tuna stuffing or your idea of stuffing and cheese sauce.

    Biscuit or your kind of bread dough rolled out and fill with stuffing: tuna, egg, onion and such.  Roll up and give some slits and bake and cheese sauce on top.

    Grilled cheese.  Bread swiped with mayo and slice tomato and onion and cheese.

    Broccoli cheese soup.  Butternut squash soup is very good.  Crab salad or seafood salad.  

    Then there is the case of seafood being contaminated now what?
