White flour is natural grain with the good parts discarded.

One reason for doing this is shelf-life for the benifit of commercial entities. It lasts longer because it has virtually no life in it. If it were alive it would deterorate too fast.

Also rats and other vermin much prefer the real thing so it cuts down on infestation. Rats know a good thing when they smell/see it.

If you want fattening up go for white bread.
If you want nutrition go for the whole grain.

Yeah, white flour is pretty barren when it comes to nutritional value thanks to the refinement proccess it goes through. I'd take whole wheat over white anyday. I can't remember the last time I ate white bread. A little bit isn't the end of the world, though.

I am curious to see how homemade saltines would work out with wheat flour. I might try it. The saltines that I made the other day seem to be holding up well. They haven't gone stale, but they've lost all crunch that they had. I guess it doesn't matter if they're being used for soup. I used some of them in soup, and i'd definately say I liked them better than store bought.

As far as deciding wether making homemade crackers is worth it, well, I guess it just depends on the persons situation. For the person who is very busy and doesn't enjoy cooking, it would be a no brainer to get them from the store. For the person who enjoys cooking and can spare an hour, making them yourself is an excellent idea. I get a lot of satisfaction out of growing, harvesting and making food, so even though I stay pretty busy, I  consider it an hour well spent.

I would bet you could make them (and make a lot of them) and clean up in half an hour.

Anyway, in defending white flour I'm not saying people shouldn't eat whole wheat, wheat germ, farina, etc.  

refined sugar, bleached flour, etc, have their place - they are cheap, long-lasting forms of food high in calories.

I'm not sure.  I'm pretty clumsy in the kitchen.  I grabbed the stove while hot today cleaning up after cooking my bacon and eggs.

My favorite crackers are "entertainer crackers"

Those are actually fairly pricey by weight, at least at Krogers.  Trader Joe's used to have them.
