  • We usually chop an avocado into the tossed salad.

    Another yummy way to eat is this:

    Cut the avocado in half lengthwise, leave the skin intact and remove the seed.
    Put a spoon of sugar in the seed hole and fill it with good coffee (or lemon juice) Mash that into the fruit and eat.  :jumping2:

  • I try to eat at least one avocado a week. I bought two at the supermarket today.

    Usually, I make guacamole, but lately I've been mashing half an avocado to use as a spread on a chicken breast sandwich, instead of mayo. It's phenomenal.

    I'm a very strong believer in dietary fat of all kinds, as long as it's natural. But of course, I emphasize the so-called healthy fats. People ask me how I lost 140 pounds (a loss I've maintained for six months). I tell them I did it by eating plenty of fat. And they look at me like:   :stare:

  • Yes, people have been conditioned by the "medical" field to think that healthy and fats are mutually exclusive.  I recommended my sis start using coconut oil to cook with and she went ballistic!  All that FAT ! ! !  How UNhealthy ! ! !  She swears by fake butter, fake creamer, fake whipped cream, non-fat yogurt, non-fat milk, non-fat sour "cream" :faint:

    I just found the "Lily" brand of sour cream - OH MY GOSH - it actually tastes the way I remember from childhood, sour, and creamy ! ! ! :jumping2:

    In order of importance:

    1.  Intuitive eating:  http://www.intuitiveeating.org/

    2.  Choosing whole, unprocessed foods most of the time.

    3.  Leaning toward foods eaten in the Paleo diet, but not exclusively or obsessively.

  • Mabel's Avocado Salad #1:
    2 avocados, chopped
    2 cups grape or cherry tomatoes, quartered
    1/2 sweet onion diced
    4 ounces fresh mozzarella, cubed
    Drizzle of balsamic vinegar and salt and pepper to taste

    I love avocados! I make several regular dishes with them.

    That looks like a great recipe.

    Do you remove the pulp from the grape or cherry tomatoes?  I used to dice them as-is, but then I read that the guacamole is less watery if you remove the pulp first.

  • I had a fried, stuffed avocado for lunch today. If it weren't for the oil they likely fried it in, I'd totally recommend consuming your avocados in this fashion!  :ready-to-eat:

    Not from those because they are small but it is more like a salad than a guacamole. Grape tomatoes don't have a lot of pulp, so I would recommend them.

    I don't like tomato in my guacamole. I never put in in mine.

    My mother always complains that her guacamole doesn't taste like mine and that she uses all the same stuff. So I asked her why and after questioning I found that she was using any onion, sometimes no cilantro, pickled jalapeño, no salt, and bottled lemon juice.  :furtive:
