I started a batch of
Ceviche
Juice ten or so lemons, strain out the seeds and pulp, put in a large pitcher.
Cube up six fillets of white or near white fish, add to the pitcher with juice.
The fish should be completely submersed in the lemon juice at this point.
Dice up two onions and add to the pitcher as a layer on top of the fish.
Mince up two bunches of Coriander and add as another layer on top of the onions.
Chop up four large tomatoes and add as yet another layer in the pitcher.
Cover the pitcher and refrigerate for a day; Drain off excess juice and mix.
Serve with chips or as a tostada.
Enjoy.

We had leftovers that can't be eaten for the two smaller meals. Sometimes it is hard to predict portions during Lent, especially for a family.
