  • I like these,

    First you take cooled peeled soft boiled eggs, slice them lengthwise and remove yolks putting them in a bowl, set aside the whites.

    Mash yolks well with a fork then stir in mayonnaise and your coice of mustard, mix well. Then fill a piping bag with the egg mixture and fill egg whites. 

    They taste nice with paprika or finely chopped green onions, you can top these with just about anything.

    Note:
    You can use a zip seal sandwich bag sniped at the bottom corner instead of a piping bag.

  • Best egg dish I ever tried (even though I thought I wouldn't like it) is Turkish Eggs.  For those who like spicy food, they are delish!
    This is a simple version:


    Olive oil
    Ghee or butter
    Finely chopped garlic
    Red hot chili flakes
    Greek yogurt
    Crusty bread for dipping

    Add to fry pan 1-2 tbsp of good fat.  Olive oil and ghee make a great and healthy combo
    Drop in a clove of chopped garlic
    Add hot chili flakes to taste
    Cook for 30 seconds at low simmer to avoid burning the garlic
    Crack in two eggs and cook gently, flipping for oversoft or medium, to maintain runny yolk

    As eggs cook:
    Place a tbsp of plain Greek yogurt on a plate
    Place finished eggs over the yogurt
    Add all pan drippings over the top
    Use dry toasted crusty bread to dip 

    Amazing!

  • I made this by sight so I don't know the exact measurements, sorry.

    Frittata 

    Choped greens ( spinach, bok choy or kale)
    eggs
    feta cheese 
    salt and pepper to taste 
    butter

    melt butter in a skillet over medium heat and saute the greens,while greens cook beat eggs in a bowl add seasoning and cheese. Then stir egg mixture into the greens. Cook untill firm on the bottom then flip. Transfer to a plate, top with more cheese if you desire. Enjoy

    I love kale, so this is an excellent way to use that big bag you get at the market. Plus, it could serve anytime of day. I'm gonna try this!
