When I was teaching, every year grades K-2 would go to the Community Farm and petting zoo. Everyone, adults included, got a complimentary pumpkin before leaving. The children’s pumpkins turned into decorations, but mine was eaten. I canned the meat in jars, seasoned it with all-spice, cinnamon, molasses, etc. Come Thanksgiving, all I did was make up some crusts, pour in the pie filling, and there was my contribution to Thanksgiving dinner. The seeds can be roasted with a little olive oil, lightly salted and spiced, popped in a slow oven to dry. They make a tasty snack.
