  • You have to wonder how much pesticide/herbicide/fungicide is in that peel though.

    My grandparents have a mature tree that we get our lemons from. My dad has one too, but it is only a few years old, and doesn't give as many. There is a ton of Citrus leftovers on many people's properties here in Southern California.

    This is a delicious and economical marmalade. Just pop your skins in the fridge till you have enough to go.

    2 cups of chopped or minced orange, mandarin, grapefruit and/or lemon skin
    2½ cups water
    1 kg white sugar
    Juice of 2 large lemons

     Soak the peel overnight in the water, then boil till the peel is soft, add lemon juice and sugar, stir back to the boil, then boil rapidly with a wooden spoon in, and an eye on, the pot to make sure it doesn’t boil over, till it reaches setting point, bottle in sterilized airtight glass bottles while still close to boiling point.
