  • Well chicken is great because it goes with so many options and flavors. You can do a simple salt and pepper rub, and maybe add some garlic powder or rosemary. Or you can marinate chicken for added flavor. Try marinating in orange juice with seasonings, a bit wine or beer, or, what I find to work especially well for grilling, yogurt. Yum!

    Finding a good, versatile spice rub is also important I think. I use this one, though it's not the healthiest because of the sugars, you don't need much and it goes with EVERYTHING- ribs, beef, pork, chicken, salmon (haven't tried it on other fish yet),etc.:

    DO NOT buy your spices from a standard grocer- you will EASILY quadruple/ triple your prices. Go to a local Mexican, or other culturally minded grocer- arabic, asian,etc. whatever's around you- market. Its cheaper, and probably better quality ingredients.

  • But, for a more simple recipe, try this:

    Get a whole chicken and cut into pieces (if you don't know how, youtube it), or get a combo pack of thighs, drumsticks, or whatever you like. Anyways, point is to not have a whole chicken together.

    Place pieces in a baking dish (pyrex), pour on juice of about 5 lemons or so (you don't want to cover the chicken in juice, but you want enough to at least cover the bottom of the pan). Then salt and pepper and paprika your chicken, cover in foil, and cook till done.

    Yum!

    My mom would cook and serve this (for my dad) with Lebanese cabbage salad (really easy), hummus (easy, cheap and tasty!), and pita. But my mexican side requires a bottle of Tapatio at the table with this! Ah... the memories.

    You can't go wrong- IF- if you stick to recipes that have been rated by many people with all 5 stars. Read the comments, and people give tips and tricks on cooking the specific recipe too. I used this when I worked in the fire department- the guys would tease about how I cooked so well,  I'd make a good wife ha ha ha I really do love cooking, smoking, and bbq-ing.

    Trivia time(!): technically, a 'tapatio', or tapatia, is someone from the state of Jalisco, in Mexico.

    My mother just so happens to be a tapatia, from Guadalajara, Jalisco, but I think just about everyone I know loves this stuff.

  • I mentioned on the other thread, honey garlic sauce is super easy to make. 1/2 c honey, 1/2 c. soya sauce, a couple crushed garlic cloves warmed over medium heat. But you can adjust the ratios to your taste. Either dip chicken in it once baked or pour it in crockpot with chicken or marinade in it before grilling. Very versatile.

    Another favorite of ours is to dip chicken drumsticks in milk and whipped egg, then roll in crushed corn flakes for breading. Add salt, pepper, poultry seasoning, and bake in oven at 350-400 depending on how crispy you want them.

  • Here's a super easy old family recipe that all the kids love & ask for.  Actually, everyone loves it!

    Sprinkle enough raw rice in a greased 9x13 pan to cover the bottom of it.  Cover with 2 cans of cream of chicken soup or, better still, with 1 can of cream of chicken & 1 can cream of mushroom, and one half cup of milk.  Place 1 cut up chicken on top & sprinkle a package of dry onion soup over the chicken.  Cover & bake in 350 degree oven for 2 hours.

  • My favorite casserole I call "Chicken Surprise":  Mix us chopped up cooked chicken with a can of mushroom condensed soup or cheese soup.  Add a cheese sauce of your own or better yet the jar of cheese sauce like medium, your style and chopped up onion if you wish.  Now, spray a casserole dish and put some 1/3 or so of the mixture and put your favorite soft tortilla shell (soft burrito) on top to cover well I use scissors to cut shells to size.  Then spread on top your favorite salsa. Then on top a soft shell and more salsa, a shell and then put the meat mixture on top. and do it again.  I like adding shredded cheese on the salsa layers and on the top you can do anything like crushed chips of any kind and maybe some more cheese before it is done. I bake at 350 for maybe 30 min when it bubbles.  This is very good.  I saw the recipe in a military calendar over 10 years ago and they even put a salad on top of it before serving.  imagine that and so you can do anything with this recipe to your style.  I serve more salsa on the side and sour cream.  I took the recipe home in Indiana for our family reunion and it made a hit!  They still make it to this day!
