Final Christmas Goodie...and then someone else can take over posting.

Attempt to make caramels without corn syrup (Apparently this was a common recipe back before the dawn of the age of corn being more common.) I have friends who are allergic to corn syrup so I have been meaning to try and make these for awhile:
First you cook the dry sugar on the stove until it becomes a syrup (this was the part that intrigued me the most and our boys had to be right up there helping me.)




After the sugar is completely melted into a syrup then you add cream and I didn't get any pictures of that because it was like an explosion. 🤣
After the cream settles the goal is to get the caramel mixture to moderately hard ball stage and then add vanilla and butter. I was a bit distracted with the little boys and I think that I took the mixture off the stove too soon...

The caramels ended up being more gooey than planned... (I don't have a candy thermometer and was a bit anxious to get it off the stove because of the little boys.

So... I rolled the caramel into balls and froze them on wax paper:


Then I dipped them in chocolate while still solid:

Final product was definitely different from a typical caramel (they tasted more like molassas) but the boys enjoyed them. So, I guess they aren't too bad. 😅
