  • A Call for a Low-Carb Diet

    Via: New York Times:
    People who avoid carbohydrates and eat more fat, even saturated fat, lose more body fat and have fewer cardiovascular risks than people who follow the low-fat diet that health authorities have favored for decades, a major new study shows.

    By the end of the yearlong trial, people in the low-carbohydrate group had lost about eight pounds more on average than those in the low-fat group. They had significantly greater reductions in body fat than the low-fat group, and improvements in lean muscle mass — even though neither group changed their levels of physical activity.
    While the low-fat group did lose weight, they appeared to lose more muscle than fat.
    “They actually lost lean muscle mass, which is a bad thing,” Dr. Mozaffarian said. “Your balance of lean mass versus fat mass is much more important than weight. And that’s a very important finding that shows why the low-carb, high-fat group did so metabolically well.”

    In the end, people in the low-carbohydrate group saw markers of inflammation and triglycerides — a type of fat that circulates in the blood — plunge. Their HDL, the so-called good cholesterol, rose more sharply than it did for people in the low-fat group.

  • I had good luck two different times losing a lot of weight by following low-carb diet with some exercise.  I lost 40 - 50 libs each time.  But after accomplishing my goals, I always start thinking a piece of pie here, a roll there, a coke, etc. won't hurt anything, and, of course gain it back.  Sticking to a running regimen is also important for me to keep weight off.

  • My sister and her husband have been on a low-carb diet for about six months. Kind of a modified palio diet. They have both lost a lot of weight. But the main reason for going on the diet is that my sister's husband has cancer. Stage 4 lung cancer for five years now, which has traveled to his brain and caused two tumors there. But he's actually getting better, even though the lung tumor is still growing, though very slowly. And the last scan showed that the brain tumor is almost gone. He should have died a few years ago, but my sister has kept him on a healthy diet, and just started the low-carb recently, but he seems to be improving with it, and has more energy. They just visited from Oregon two weeks ago. I'm hopeful that he will beat the cancer. We'll see.

    Oh, and I just this morning baked a loaf of low-carb gluten-free bread, made with mostly almond flour. It's very good.

  • I use the recipe from Elena's pantry. Here it is:

    Except that mine doesn't turn out as tall as the one in the picture - mine's about half as tall. It might be because I don't use a food processor (I use a hand mixer), and I have a larger pan that is recommended in the recipe (I use a regular bread baking dish). I added a banana to the recipe this morning, so it's like banana bread.  :ready-to-eat:

    I learned about low-carb diets for cancer when my husband was diagnosed with cancer.  The theory is that a very low carb diet shifts the body's metabolism to burn ketones rather than sugar.  Normal cells are fine doing this but cancer cells can only burn sugar so they starve and weaken.  

    There have been many docuмented cases of cancer being stopped or reversed by a ketogenic diet.  I hope and pray that it works for you brother-in-law.

    I made this yesterday because I had some almond flour that I needed to use up.  I had noticed it on the shelf earlier in the day and realized that I had had it for a while and it was in danger of going rancid.  So I decided to try this recipe even though it was the sort of hot and muggy day when I usually avoid baking.

    To avoid adding even more heat to the house, I decided to try making this recipe in the microwave.  I tried 5 minutes rather than the 30 called for in a conventional oven.  This was about the right time although perhaps it could have used another minute.  The texture was not bad and the flavour was amazing.  I strongly recommend this recipe.  I intend to try it again when the weather cools down, using the normal oven.

    Jayne, did the low-carb diet help your husband? Your description of the diet as it relates to cancer is the same as my sister's description. Quite amazing that the medical industry doesn't advocate tis for cancer sufferers, but then it would be difficult for big pharma to make a profit from it (but that's another subject altogether!). Thanks for the good wishes for my brother-in-law.

    Regarding the paleo bread with almond flour, it's good to know that you had good results from baking it in the microwave, which is a good option. I might try the muffin tins next time. It might bake more evenly that way, since mine was slightly soggy in the middle (need to increase cooking time, maybe).

    When they did the surgery and analyzed the tumour they had removed they said that it had been misdiagnosed and was actually benign.  (It still needed to be removed, so no harm done.)  Even so, the diet was helpful, since my husband had been overweight and, thanks to the diet, he was the ideal weight for his surgery.

    Something else I'd like to try with that recipe is adding cocoa powder.  I suspect it would go well.
