Actually, it wasn't the fact that they were vegetables that was the problem. The Catholic priest, after all, puts not-quite-fresh wheat hosts and fermented grape juice on the altar where he proceeds to "make something of it."
No, it wasn't the fruit of the farmer's land (like hosts and wine are too) that was the problem. God saw His creation and saw that it was GOOD. Then came the FALL of man that introduced death and corruption.
No, it was rather the fact that Cain used not the best of his produce but rather the stuff that he was going to throw away anyway, or else give to the PIGS (which is arguably why pork is not Kosher even to this day), that was displeasing to God.
For God knew what He had in mind, even if He wasn't showing all his cards. He had the Crucifixion of His Son in mind, and the Catholic Mass in mind and the Eternal Wedding Feast of the Lamb in Paradise forever in mind.
He wanted a PURE, SPOTLESS and IRREPROACHABLE sacrifice from Cain and Able. And that is exactly what He got from Able and it is exactly what he did NOT get from Cain.
That was the problem, not the "vegetables."
And likewise today, having a Feast Day the last Thursday of November is not displeasing to God. You guys ought to lighten up and not be so prudish. Thanksgiving Day is more Catholic than anything else, even if it was an ATTEMPT by the Puritans and heretic Protestants to wage battle against the Church, guess what? It didn't work-----------------------
That is, it DOESN'T work unless there are sour-pusses like you bunch around who fall prey to the wiles of satan and refuse to see what the Church sees in this.
