  • While reading through v1 of Taines French Rev, I found the following on pg 37. "Confined to their barracks, they(French Guards) break out on the 27th of June(1789). The patriots gather round them and treat them to wine and ice cream......".

    Does anyone know how ice cream could be made in the summer before there was any electricity to keep it frozen or even cold?

    Yes, the ice was stored in underground vaults or "ice towers" in winter and the lower temperatures kept it frozen for several months.

    I was at a stately home in Wales a couple of weeks ago and they have an "ice tower". In Elizabeth Gaskell's novel "Cranford" they also make reference to the method of storing ice.
