In a formal setting make merely making polite conversation with someone who really doesn't care about my family, I would simply respond, "They are doing well." In such cases, I rarely ask about the questioner's family in return since I know he or she doesn't care and is simply trying to be polite in an awkward way.
If it is a more informal setting, I would reply something like, "They're fine," or "Everything is ok," etc.
