Indeed.  Does OHCA really believe that blacks' consumption of chitlins (more formally "chitterlings")--intestines--was a matter of choice?  After slaughtering livestock or wild game, the whites they typically worked for [†] took the better parts, so innards and other parts like heads, feet, and tails were what blacks became accustomed to having left for their own meals.  More than a century of an amazingly positive attitude developed it into "soul food".

Let's at least compare stereotypes on approximately the same social level, shall we?  Fried chicken and collard greens, with watermelon for desert.  You wouldn't be one of those readers who uses a knife & fork to eat fried chicken, would you, OHCA?
