What % are non-white?
We've seen photos of public school classes in Seguin -- in a class of 25, you'll have 24 hispanics and 1 white kid. Sometimes 0 white kids.
Fortunately if I get weary of being the only white guy, I can drive 20 min North instead of 15 min East, and find myself in New Braunfels, TX which is a very German city, with everything that goes along with that. (Braunfels is a city in Germany, BTW). There's another very small town called "New Berlin" about 10 minutes away. Texas is a mix of Mexico and Germany, with a bit of WASP thrown in. Half the Germanics around here are Lutheran though. The other half descend from Catholic Germans (like my wife's family).
As far as the whole race issue, personally I consider Hispanics more of a "grey area" since they are culturally and historically Catholic, and certainly not as problematic as other groups. I have no problem with them personally. I share a lot of their culture (hard work, frugality, down to earth, etc.) I grew up in a midwest town, with blacks as the dominant minority I had to mix with on the bus, at school, etc. One of them even stole my bike (literally!) I believe their culture is more problematic. So yeah -- I'm not bothered by Hispanics.
But if Hispanics bother you as much as the guys flooding Europe, etc. -- yeah, you're not going to like Texas.
But Texas works for me. Whether I'm sick of being the only white, or sick of being the only Catholic, Texas provides the variety so I can deal with both issues, as they arise. I get to take turns feeling "at home" in various ways -- just not all at once. So in the end, I don't feel isolated nor do I go crazy. Keep in mind, this isn't an ideal world.
