Homeschooling is really the only way to go for Catholic parents nowadays.
Cantarella...how does homeschooling work?  What do parents teach their kids and how do they know what to teach them?  How are the kids assessed?

I can't answer for Cantarella, because every family is as individual as every child within the family is individual.

So homeschooling for us worked very well, albeit many years ago as my youngest is now approaching 32 years. Our first two children attended school for 2 and 3 years and appalled by what they were receiving as "education" we withdrew them from the system.

At the time and at the place where we lived homeschooling was illegal if you were not a teacher, or not under the supervision of a trained teacher. So we did it illegally. We had a visit from the police to whom we told our story and they went away and did not return.

We collected materials from wherever we could find them - usually 2nd hand because they were the most didactic - bought, borrowed and donated. Our children progressed well, went on to become respectively a priest, an electrician and a nurse (now a mother). Our two youngest intend to homeschool their children, in fact as already doing so though none of their children is of school age yet.

what to teach them?
There are many educational services which can offer curriculums to suit you and your family's needs. In fact there are many threads here dealing with the question.

How are the kids assessed?  
If my children wanted to enroll in a particular course I would send them with a sample of their work. Sometimes they were told that our homeschooled students are our best and would not even want to see the sample of their work. They did a matriculation course as in intro to university studies.

We saved much time on daily schooling and also in years of schooling.

For us, we were directed to SETON home schooling from Front Royal, VA.  It is catholic and all the curriculum was all in place.  We had 3 children grade 7, 4 and K.  Ever child has their own notebook with all subjects and by each day what to do.  I was so excited because the curriculum was like a 6 course meal compared to rice cakes of the public school system.

We were all learning. (We are in AZ.  The state is most lenient, that is you don't have to show your curriculum and such, as far as I know, that was how it was for us up to 2005).

When the kids can read, they can dig right in and do their work and parents just guide and correct work.  Another school group is Our Lady of the Rosary.  I used the material for the students ages 5 and maybe 10.  Very nice!

After 4 years, I went part time work and the kids were pretty much doing it.  I never regretted and I could sleep at night.  SETON tests the students and then places them. Our son was to go to 7th and they kept him at 6th grade and that was just fine.  He was never taught to write paragraphs to reports.  We had a tutor for 1st High School math and that was all.  Then when you know your child is ready for work and such, they had a GED test and off they went.

Today they are ages 32-42.  They had no troubles getting work.  Our son hauls oversize loads to construction of homes. One is 2 classes from RN and another is a Insurance medical broker and another is a manger of supply between 2 hospitals who both wanted her, so they speak of sharing her now.  All are traditional catholic except one.  Many prayers for her.

I thank God we were blessed to know the rottenness of the public schools and were able to take care of them.  I learnt a lot all over and it was great!  We went year round after 5 years and that was very relaxing.
