I was married years ago during the Sunday Mass. This was unconventional but so am I and my spouse.
I think most marriages are celebrated on Saturdays for convenience. Most people are free from work that day. And priests have Sunday Masses to say.
There is no reason not to marry on a Friday, as far as I know. In the new order meat on Friday is not a problem, so the reception does not need to be vegetarian.
