When you consider the explosion of gluten sensitivity in recent years, it makes sense.
Back in the olden days, we ground our own wholemeal flour and we used to buy 500gm packets of gluten to add to the mix. Nobody suffered and everybody loved the bread. I remember that on the gluten packaging was a recipe for gluten steaks which I never tried.
Today, it’s practically impossible to buy gluten. If you ask in a shop the attendant will answer “Oh, you want glutenfree”.
No I don’t, I want gluten. They look at you like you’re a pork chop in a ѕуηαgσgυє, or at least like you are speaking a foreign language.
