That's because he teaches as one having power, and not as the Scribes and Pharisees.
Remember that Our Lord's power (to teach, preach, offer Mass, sanctify) was passed on to the bishops and priests ordained throughout the ages. That is the power we should see coming from the Pope and other prelates.
Alas, it is all too rare today.
And he can be calm because he's confident that he has found the truth. A person content with his manhood doesn't get all bent out of shape when someone calls him a sissy.
You know the expression "He doth protest too much?" Well, there's a flipside law to that. If you ARE secure, you WON'T get all flustered.
