I am curious as to what the minimum amount of daily prayer would be necessary to not be a mortal sin? I can’t seem to find any resources on this topic.
Would going to Mass on Sunday and saying a few Ave’s before bed be okay, as I neglected to say my Rosary that day?
Interesting question. I don't know if there's any rule somewhere of a hard and fast minimum.
And it would be interesting to know what inspires this question. It could be scruples, or it could be minimalism (i.e. a desire to do as little as possible for God & still avoid hell). If the latter, I would advise the person to change their attitude, and learn to be more generous with God. If the former, and say, the person is really trying to pray the Rosary every day, but had a very busy day in which he could not get it in, and was exhausted at bedtime: in that case, a few Aves before bed would be fine for that day. But if one says they're that exhausted every day, one needs to learn to change their priorities.
Also, there are ways to squeeze in a few more prayers - e.g. get a recording of some morning prayers and listen in the car on the way to work. Get a recording of a Rosary & listen when you can.
And of course make a morning offering, offering all your prayers, works, joys & sufferings as acts of love for God, so that in a way makes everything you do a prayer.
But in general, make sure you are truly doing your best for God. If you spend an hour each day browsing the internet unnecessarily, or playing games, watching TV, and then say, "

It is not about just escaping hell, but about loving God with all your heart, soul, mind & strength. On the other hand, if you are trying your best for God, but just wondering if one particularly busy day you committed mortal sin because time got away from you & you didn't pray much, then you might talk to your priest about scruples.
