What sort of clothes should women wear in daily life outside of Church. Any recommendations?

 Is it appropriate to invoke my authority as husband to insist she wear skirts?

Women must wear women's clothes.

Pants are men's clothes.

Every single pious woman I met wears a dress or long skirt.

You will notice that Piux XI makes no distinction between how a woman dresses INSIDE of a church versus OUTSIDE of a church. Modesty doesn't begin/end at the church door.

So, yes, you should insist that your wife wear modest clothing. She may not submit to you immediately. But that is between her and God. You will have done your duty. 

Give her some time to adjust. It really is difficult for women to find modest clothing in stores. Ask other modestly-dressed women at church to give you a list of online shops to buy modest clothing. Again, help her and give her time.
